Wet Ingredients
2 cups (460ml) buttermilk
2 large eggs
2 tbsp melted butter
1 tsp vanilla extract
Dry Ingredients
2 cups (260g) all purpose flour
2 tbsp sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
Instructions:
1. Combine the buttermilk, eggs, melted butter and vanilla in a mixing bowl. Stir to combine.
2. Sift in the flour, sugar, baking powder, baking soda and salt. Gently fold the dry ingredients into the wet until the batter is smooth. Leave this to rest for 20 minutes.
3. Mist the silicone molds with cooking spray or cake release. Make sure they are well greased. Add one small scoop of batter in each and place in the Air Fryer basket.
4. Cook for 5 minutes at 350°F / 180°C – the tops should be slightly golden. Use tongs to invert the pancakes directly into the basket so that they are flipped over. Cook for a further 4 minutes or until golden.
5. Repeat until you have used up all of the batter, making sure to grease the molds every time otherwise the pancakes will stick.
6. Serve with maple syrup and fresh berries or with your favorite toppings. Absolutely delicious!
