Southern beef stew

Southern Beef Stew
1 cup grapefruit juice
1 teaspoon salt
1 clove garlic, minced
1 1/2 pounds beef round, cut in 1 inch cubes
2 tablespoons salad oil
1 large green pepper, cut up
1 large onion, sliced
1 cup chopped fresh tomatoes
2 tablespoons brown sugar
1 tablespoon red wine vinegar
1 teaspoon dried leaf rosemary
1 bay leaf, crumbled
1/2 cup sliced pitted ripe olives
Combine grapefruit juice, salt and garlic in a large bowl. Add beef cubes; refrigerate overnight. Drain beef, reserving marinade. Heat oil in heavy kettle or Dutch oven; brown beef on all sides. Add green pepper and onion; saute for 3 minutes. Add tomatoes. Combine reserved marinade with brown sugar, vinegar, rosemary and bay leaf; add to beef, cover and simmer for 45 minutes, or until beef is tender. Add olives; simmer for 5 minutes longer.
Makes 2 servings for 2 meals.

Trying out slimming world meals

So yesterday I went to iceland, which is a local store here, they have the slimming world range of meals, and I bought a few of them to try out.
I got beef madras, beef lasagna, an indinisian rice dish, and mac and greens.
I tried the indinisian dish today.
It was lovely. Its rice with chicken pieces, and vegetables, in a fragrant sauce.
It takes 12 minutes to microwave the slimming world meals. You put the meal on for 6 minutes, and then you stir it, and return it to the microwave for another 6 minutes.
I do have to say I did like the meal I tried today. I wouldnt eat these all of the time, but they are handy in an emergency or if you didnt want to cook something on a particular day.
I’d definitely buy them again!

Ham and cheese sticky buns

Ham And Cheese Sticky Buns
24 party-size potato rolls
1 pound sliced Swiss cheese
1/2 pound sliced ham
2 sticks butter
1/3 cup brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons prepared mustard
2 tablespoon poppy seeds
Slice rolls in half and place bottoms in 9 by 13 inch baking pan. Layer on cheese and ham and top with roll tops. Melt butter in a saucepan and add brown sugar, Worcestershire sauce, mustard and poppy seeds. Bring to a boil and let boil for 2 minutes. Immediately pour over rolls and bake at 350 degrees for 20 minutes.
Makes 12 servings.

Family confirmation meal

We had a great night out with the family. Just got home 10 mins ago.
we went to cork international airport hotel. Thats a 5 star hotel. There were a bunch of us, about 40 people in total.
We had an amazing time there. The food was so yummy. We were celebrating my sisters partners cousins confirmation. The little girl whose confirmation it was, molly is her name, she was beautiful.
We all got a 4 course meal. A starter, main, dessert and then tea and coffee.
I had a bacon and mozarella croquette for starters, it was served with salad.
Then for main I had steak, which came with fries, mushrooms, and pepper sauce and it was absolutely mouth watering.
For dessert I had apple crumble with ice cream and custard. Again that was sooo delicious. I am stuffed now. I’ll have to really cut back on portion sizes for the rest of this week. I will just have to try so hard to be good with my food and make good food choices. And mind what I am eating.
It was a nice evening though. I am glad we got to go.

Recipe of the day. Super sausage supper

Super Sausage Supper
1 (8 ounce) package hot sausage
1 (16 ounce) package frozen mixed vegetables
1 (10 3/4 ounce) can cream of broccoli cheese soup
Slice sausage and place in 3 quart slow cooker. Distribute frozen vegetables over the sausage. Spread undiluted soup on top of the vegetables. Cover; cook on low for 5 to 6 hours, or on high for 1 hour, or until meat is cooked and vegetables are tender.
Note:
This simple meal is quite thick and can be served on dinner plates rather than in soup bowls.
Makes 3 to 4 servings.
