chicken curry

Linda’s #SoCS prompt this week: Your Friday prompt for Stream of Consciousness Saturday is “ch.” Find a word that starts with “ch” and use it as your prompt word. Bonus points if you start your post with that word. Enjoy!

chicken curry for dinner, leftovers from yesterday. I dont care. I love it. It has plenty of veg in it, so I’ll definitely get my vegetables in.  We used a curry powder, a slimmers one. it turned out really great though. and you can’t tell the difference, you really cant taste any difference in the sauce.  we’re having it with rice, and chips.  now i’m hungry. i can’t wait for dinner.

I think my moms watching a quiz on tv, tipping point. So we probably wont have dinner until thats over.  So will just have to entertain myself until then. A good time to read a little more of my book, me thinks.

Yummy dinner

Well moms curry was epic! I absolutely demolished it!

We had nan bread and pompadoms with it, yum!

I ate a huge plate of it! It was absolutely gorgeous. it has onions, carrots and peppers in it, green, red and yellow ones!

I have leftovers for tomorrow!

And after dinner I took a 3 hour nap! I was reading but was falling asleep reading so turned off my book and snuggled down and took a nap!

A delicious curry

My aunt cooked for us all this evening. She made a chicken curry.

It was so delicious. My sister and cousin came down for the night, and we all had dinner together, my two aunts, my mom, sister, cousin and me.

The curry had so much stuff in it. It had onion, mushroom, courgette, peppers, chick peas, carrot, chili, and garlic. Along with lots of curry powder and other spices. It was absolutely amazing.

I am so stuffed now. We had nan bread, rice and oven fries with it.

Now we’re going to party the evening away!

Fat free natural yogurt
Fresh coriander and fresh green chilli, to serve

1.Place the chicken on a plate, season well and set aside.
2.Spray a frying pan with low calorie cooking spray and place over a medium heat. Add the onion, mushrooms and peppers and stir-fry for 5-6 minutes or until starting to lightly brown.
3.Stir in the garlic, curry powder and stir-fry over a high heat for 1-2 minutes.
4.Add the chicken and cook for 2-3 minutes until sealed, then add the tomatoes and stock. Bring to the boil, cover tightly, reduce the heat to low and allow to simmer gently for 40-45 minutes, stirring occasionally until the chicken is cooked through.
5.Remove the frying pan from the heat, adjust the seasoning to taste and serve garnished with chopped coriander and sliced green chillies. If you enjoy a creamier curry or want to make the curry less hot swirl in some fat free natural yogurt.
