6 baking apples, peeled, cored and quartered
1/4 teaspoon nutmeg
2 tablespoons sugar
3/4 teaspoon Asian five-spice powder
1/4 cup apple juice
Place prepared apples in 3 quart slow cooker. In a small mixing bowl, combine all remaining ingredients. Pour into slow cooker, stirring gently to coat apples. Cover; cook on low for 4 to 5 hours, or until apples are tender as you want them. Serve the apples sliced or mashed in warm, cold or at room-temperature.

Caramel apples

Caramel Apples
4 large tart apples, cored
1 (14 ounce) jar caramel sauce
1/2 cup apple juice
1 teaspoon apple pie spice
Remove peel from top inch of whole apples. Place apples into 3 quart slow cooker, making sure that each one is sitting flat on the bottom of the cooker. Fill the center of each apple with one-fourth of the caramel sauce. Pour apple juice into the bottom of the cooker. Sprinkle apples with apple pie spice. Cover; cook on high for 2 to 3 hours.
Tips:
Cooking time will vary according to the size of the apples.

CrockPot Apple Bread Pudding

Ingredients

* 8 slices white bread, cut into cubes (about 4 cups)
* 1/2 cup (1 stick) butter, melted
* 1/2 teaspoon cinnamon
* 1/4 teaspoon nutmeg
* 1/8 teaspoon salt
* 3/4 cup firmly packed brown sugar
* 4 cups peeled and chopped cooking apples
* Whipped cream for garnish

Instructions

1. In a large bowl, combine bread cubes, butter, cinnamon, nutmeg,
salt, and
brown sugar; mix well.

2. In a 4-quart slow cooker, starting with the bread mixture, alternate
layers
with the chopped apples.

3. Cover and cook on high setting 1-1/2 hours or low setting 3 to 4
hours, or
until apples are tender. Serve warm with whipped cream.

Caramel apples

Caramel Apples
1 cup butter (no substitutes)
2 cups packed brown sugar
1 cup light corn syrup
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract
8 to 10 wooden sticks
8 to 10 medium tart apples
In a heavy 3 quart saucepan, combine the butter, brown sugar, corn syrup and milk; bring to a boil over medium-high heat. Cook and stir until a candy thermometer reads 248 degrees (firm-ball stage), about 30 to 40 minutes. Remove from the heat; stir in vanilla. Insert wooden sticks into apples. Dip each apple into hot caramel mixture; turn to coat. Set on waxed paper to cool.
Note:
For even more fun and flavor, roll the bottom of each coated apple in chopped peanuts before setting on the waxed paper to cool.
Makes 8 to 10 apples.

Crunchy baked apples

Crunchy Baked Apples
1/2 cup chopped walnuts
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 cup packed brown sugar
1/4 cup raisins
2 tablespoons butter or margarine, melted, divided
4 medium tart apples
1 lemon, halved
4 (3 inch) cinnamon sticks
3/4 cup apple juice
In a blender or food processor, grind together walnuts and sugar. Add cinnamon; set aside. Combine the brown sugar, raisins and 2 tablespoons of butter; set aside. Core apples and peel the top two-thirds of each. Rub tops and sides with lemon; squeeze juice into centers. Brush apples with 2 tablespoons butter; press nut mixture evenly over peeled portion. Place in an ungreased 9 inch baking dish. Fill apples with raisin mixture. Insert a cinnamon stick into each apple; drizzle with remaining butter. Pour apple juice around apples. Bake, uncovered, at 375 degrees for 40 to 50 minutes, or until tender. Cool for 15 minutes before serving.

Fresh Apple Cake
1 1/3 cups oil
3 eggs
2 cups sugar
2 teaspoons vanilla
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
2 1/2 cups flour
1/2 cup dates, chopped
1 cup black walnuts, chopped
3 cups apples, peeled and diced
Non-dairy whipped topping, optional
Cream together oil, eggs, sugar and vanilla. Add salt, baking soda, baking powder and flour; mix well. Stir in dates, walnuts and apples; mix well. Pour into greased 9 by 13 inch pan. Bake at 325 to 350 degrees for 1 to 1 1/2 hours, or until toothpick inserted into center comes out clean. Let cool for 20 minutes in pan before removing.

3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 1/2 cups oil
1 cup sugar
1 cup brown sugar
4 eggs
1 teaspoon vanilla
3 cups apples, diced
3/4 cup nuts, chopped
Sift together flour, baking soda, salt, cinnamon and nutmeg. In large bowl with mixer, beat oil and sugars for 6 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla; add flour mixture. Fold in apples and nuts. Pour into greased 9 inch tube pan. Bake at 350 degrees for 1 1/2 hours.
