Lutefisk, cod pickled in lye. Not my favorite. But the numbers of people with Swedish and Norwegian heritage is quite high here, old country favorite! We eat a white fish Christmas eve, sausages, lingonberries and green beans, Swedish lite in honor of my husband’s family.

Since Colorado is part of the Southwest, which has a very large Hispanic population, tamales are HUGE Holiday tradition everywhere you go. I LOVE tamales too. 🙂

what is a tamale? What is it made with?

What is a tamale? WOW! How do i describe it? Tamales are stuffed pockets, usually made with some kind of a corn masa or dough. Usually they are filled with meat and topped with a sauce, but they can really stuffed with anything. They are often made for desserts too, stuffed with either fruit or chocolate. They are very popular in Latin America and all of the parts of America with large Hispanic populations.

Turkey. I ate it on Christmas only once though and didn’t like it the way my husband had prepared it then.
