Ground Beef Hash And Eggs
2 pounds ground beef
1 (6 ounce) package hash brown potato mix with onions
1 cup shredded Cheddar cheese
1 teaspoon salt
6 eggs
2 tablespoons milk
Shape beef into a large patty in bottom of a large skillet. Brown for 5 minutes, or until beads of moisture appear on top. Cut into quarters and turn. Brown for 5 minutes longer. Remove from skillet with slotted spoon. Pour off and reserve 3 tablespoons fat. Prepare potatoes following label directions, adding Cheddar cheese and salt, replacing butter or margarine with beef fat. Mix beef, potatoes, cheese and salt. Turn into 10 cup shallow casserole. Make 6 indentations in beef mixture with spoon. Break 1 egg into each indentation. Bake in a 350 degree oven for 20 minutes, or until eggs are done as desired.
