Italian Cookies
2 cups sugar
5 cups flour
2 teaspoons cream of tartar
1 pound sweet butter
5 egg yolks
Few drops of vanilla
1 quart strawberry jam
Combine sugar, flour and cream of tartar on a wooden board; make well in center. Add softened butter, egg yolks and vanilla. Knead mixture until consistency of a smooth paste. Divide dough into 2 parts, 1 part about three-fourths of dough, the other about one-fourth. Press larger amount of dough into bottom of baking sheet. Spread jam over dough. Heat oven to 325 degrees. Roll out remaining dough until thickness of pie crust; cut into strips. Form diagonally latticework on top of jam. Bake for 1 to 1 1/2 hours until top is golden brown. Cut into diamond-shape cookies.
