Old Fashioned Ginger Cake
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 1/2 teaspoons ginger
1/2 cup shortening
2/3 cup boiling water
1 egg
1/2 cup sugar
1/2 cup molasses
Apple Fluff (see below)
Sift together flour, baking powder, baking soda, salt, cinnamon and ginger. Melt shortening in water. Beat egg until frothy; gradually add sugar; beat until thick. Add molasses and shortening mixture. Blend in sifted dry ingredients and beat until smooth. Pour into well-greased and floured 8 by 8 by 2 inch pan. Bake at 350 degrees for 40 to 45 minutes. Cool; serve with Apple Fluff.
Apple Fluff
1/2 pint whipping cream
1/2 cup sifted powdered sugar
2 tablespoons lemon juice
1 cup applesauce
Beat whipping cream until stiff; fold in remaining ingredients. Chill; serve on cake.
