Chili Cheese Bake
3 cups cooked white or brown rice
1 can (16 ounces) kidney beans, rinsed and drained
1 medium onion, chopped
1 can (4 ounces) chopped green chilies
2 garlic cloves, minced
2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon creole seasoning
1/2 teaspoon salt
2 cups shredded sharp Cheddar cheese, divided
In a greased 2 quart baking dish, combine all ingredients except cheese. Top with 1 1/2 cups cheese. Cover and bake at 350 degrees for 25 minutes. Sprinkle with remaining cheese. Bake, uncovered, for 10 minutes longer.
Makes 10 servings.
