Recipe of the day. MOrning glory muffins

Morning Glory Muffins
3 eggs
1 cup oil
2 teaspoons vanilla
2 cups grated carrots
1/2 cup chopped nuts
1 apple, peeled and grated
1/2 cup coconut
1 cup raisins
2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon nutmeg
1/2 cup brown sugar
1/2 cup sugar
2 teaspoons cinnamon
1/4 teaspoon salt
Mix together eggs, oil and vanilla. Add carrots, apple, nuts, coconut and raisins; mix well. Add remaining ingredients. Use paper liners and fill muffin cups two-thirds full. Bake at 350 degrees for 15 to 20 minutes until they spring back when lightly touched.
Makes 24 muffins.
