Hash Brown Potato Casserole
1 (32 ounce) package frozen hash brown potatoes, thawed
1/2 cup melted butter
1 can (10 3/4 ounce) cream of chicken soup
12 ounces grated Cheddar cheese
1 cup sour cream
1 teaspoon salt, optional
1/2 small onion, chopped
2 cups crushed cornflakes or buttery crackers
1/2 cup melted butter
Heat oven to 350 degrees. Place potatoes in 9 by 13 inch pan. Mix together 1/2 cup butter, soup, cheese, sour cream, salt and onion; stir in potatoes. Mix cornflakes with 1/2 cup melted butter and sprinkle over casserole. Bake for 40 to 45 minutes.
Makes 12 to 14 servings.
