Recipe for Wednesday. Ginger mint loaf

Ginger Mint Loaf
2 1/4 cups all-purpose flour
1 1/4 teaspoons baking soda
1 teaspoon salt
1/2 cup sugar
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/4 teaspoon cloves
2 eggs, beaten
1/2 cup milk
1/2 cup light molasses
1/2 cup oil
2 (8 1/2 ounce) cans crushed pineapple, drained
1/4 teaspoon peppermint extract
Sift together flour, baking soda, salt, sugar, ginger, cinnamon and cloves. Blend together remaining ingredients; stir into dry ingredients. Pour into greased 9 by 5 inch loaf pan and bake at 350 degrees for 50 to 55 minutes.
Makes 1 loaf.
