Bonus recipe for sunday

Pineapple Pumpkin Muffins
1/2 cup pumpkin
1 large egg
1/2 cup milk
1/2 stick butter, melted
1/2 cup crushed pineapple, drained
1 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
2/3 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup brown sugar
Combine pumpkin, egg, milk and butter. Mix together flour, baking powder, salt, sugar, cinnamon and nutmeg. Make a well in center of flour mixture and pour in pumpkin mixture; blend well. Fold in pineapple. Fill buttered muffin cups two-thirds full. Sprinkle with brown sugar. Bake at 425 degrees for 20 to 25 minutes.
