recipe of the day. pumpkin muffins

Pumpkin Muffins
2 1/2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup shortening
1/2 cup butter
2 cups brown sugar
2 eggs
2 cups pumpkin
1 teaspoon vanilla
3/4 cup chopped dates
3/4 cup chopped nuts
Stir together flour, baking powder, baking soda and salt; set aside. Cream shortening, butter, brown sugar and eggs. Fold dry ingredients alternately with pumpkin into egg mixture. Add vanilla, dates and nuts. Fill greased muffin cups two-thirds full. Bake at 350 degrees for 30 minutes.

  1. THANK YOU!! I have been looking for a good recipe for pumpkin muffins for a while and I think I may have found it! Hope they come out ok. I do have pumpkin as I bought a lot during the Thanksgiving season. Soon as the weather cools of, I will make this!

  2. Because I am nothing if not committed to making the healthiest of choices, do you think I could switch out the dates for chocolate chips or do you need the dates for texture?

      1. I bet the one with dates is excellent, but we have become addicted to this chocolate chip pumpkin bread that someone in our area makes. Unfortunately it’s hard to find, and I haven’t been able to come up with a good recipe instead. I’m definitely going to try this one!

      2. It sounds good to me anyway, I’d like to try it too but we don’t get pumpkin over here in Ireland, so it’s hard for me to be able to make pumpkin bread, but if you do try and let me know how you get along with it
