Caramel Topped Raisin Bran Muffins
6 tablespoons butter
6 tablespoons firmly packed brown sugar
1/4 cup corn syrup
1 cup Raisin Bran cereal
3/4 cup milk
1/4 cup unprocessed wheat bran
3/4 cup molasses
1/4 cup oil
1 egg, beaten
2 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup raisins
Heat butter, brown sugar and corn syrup over medium heat until sugar is dissolved; bring to a boil without stirring. Pour 2 tablespoons of mixture into 6 large greased muffin cups; set aside. Mix together cereal, milk and wheat bran; set aside for 10 minutes. Blend in molasses, oil and egg; add flour, baking powder, cinnamon, baking soda and salt just until combined. Stir in raisins. Place batter in reserved muffin cups dividing evenly between each cup. Bake at 400 degrees for 25 minutes until toothpick comes out clean.
Makes 6 large muffins.
